Strong security
You can rob jewelry stores or small banks either alone or as a pair. Jewelry stores have strong security, so you're better off preparing properly.
The Extended Look shows one: masked robbers at the door and customers on the floor between the display cases. Complex describes the job ending in a motorcycle escape.
On the map
Jewelry stores sit above local stores, and TGG watched higher-tier targets appear on Nelson's map. Hover one and it shows roughly how much the take could be — though a blip is not guaranteed.
Walk into a jewelry store and notice what is in the cases: TGG expects targets like this to surface just from exploring, the way Red Dead Redemption 2 did it.

Selling the haul
Stolen jewelry goes into the duffel bag and only becomes money when a jewelry fence buys it. Fences unlock as the story progresses, so early hauls may have to wait. See GTA 6 money.
The duffel bag has its own balance on the HUD, under your cash and your BuckMe bank account. Only the bank balance is safe: die with loot or cash on you and you can lose it.
Unlike GTA V, where a heist's take turned into money when the mission ended, GTA 6 makes you carry the goods to a fence yourself — a jewelry fence for jewelry, a drug fence for drugs, a car fence for cars.
